Who wants to wait 30 minutes for cakes to cook in a conventional oven? We certainly don’t. In fact, the quicker we can bake a delicious treat, the better.

Introducing the mug cake - your new favourite sweet treat. It’s literally a cake that is baked in a mug and is cooked in a microwave, so it’s perfect for when you’re craving a solo-sized snack and don’t want to wait too long for it to bake.

In order to ensure we are all creating the perfect mug cakes, one of our favourite vegan and gluten-free brands, Creative Nature, has been kind enough to share their ultimate chocolate brownie and banana bread mug cake recipes.

Brownie Mug Cake

If you’re in the mood for something indulgent, then Creative Nature’s Brownie Mug Cake recipe is definitely the one for you. It’s rich and gooey - bound to satisfy those late night chocolate cravings.

You will need...

1. 1 tbsp milled flax seed
2. 3 tbsp water
3. 40g butter/margarine
4. 80g Creative Nature Chocolate Chip Brownie Mix

How to make…

1. Combine your flax seed and water in a mug and allow to sit for 5 minutes until it becomes gloopy.

2. Stir in the chocolate chip brownie mix and butter/margarine until the mixture reaches a thick consistency.

3. Smooth over the top layer of the cake mixture and microwave on full power for 30 seconds, then allow it to stand for a further 30 seconds.

4. Repeat this step until the mixture has reached a total cooking time of 2.5 minutes and has a delicious fudgy brownie texture on the inside.

5. Now it’s time to top off your mug cake! We love adding chocolate sauce and Salted Caramel Gnawbles to ours.

 

Banana Bread Mug Cake

For those that aren’t chocolate lovers, we recommend Creative Nature’s Banana Bread Mug Cake. It is sweet, soft and a unique twist on the lockdown favourite (plus, you don’t have to share it with anyone else).

You will need...

1. 1 ripe banana
2. Dash of water
3. 40g butter/margarine
4. 80g Creative Nature Banana Bread Mix

How to make…

1. Take your banana and mash it in a regular sized mug with a fork.

2. Add your butter/margarine and combine with the banana.

3. Stir in the banana bread mix and a dash of water until the mixture reaches a thick consistency.

4. Smooth over the top layer of the cake mixture and microwave on full power for 30 seconds, then allow it to stand for a further 30 seconds.

5. Repeat this step until the mixture has reached a total cooking time of 2.5 minutes and has a light cakey texture on the inside.

6. Now it’s time to top your mug cake! We love adding caramel sauce and extra banana slices.
