Easy dinner recipes to see you through lockdown

Stuck for midweek food inspiration? Look no further - the Mighty Small team is here with five quick, easy & healthy weeknight meal ideas! We’ll run through some of our favourite food cupboard saviours and show you how they can spice up your suppers this lockdown.

Monday Night

First up we have Fiid’s Italian Sundried Tomato Lentil Ragu! Rich and hearty, it combines earthy lentils with sweet tomatoes, creating a nourishing and healthy meal. Boasting a long shelf life, it’s vegan & gluten-free, contains 3 of your 5 a day, high in protein & fibre yet low in sugar, & completely fat free.

For a super speedy and nutritious Monday night meal, pop it in the microwave for 2 minutes and serve! We also like to throw it over pasta as a delicious, warming and healthy sauce.

Tuesday Night

Thai Green Curry is the perfect midweek meal. This Bay’s Kitchen low FODMAP stir in sauce is brilliant for speeding up the cooking process. Medium spiced, creamy and with fresh flavours of coconut and lemongrass, it’s ideal for those who are vegan, gluten or dairy-free.

Simply cook up some veg, add in a protein source - we love chicken, soya or tofu, stir in and heat! It’s delicious on its own or when paired with rice or noodles. For a low carb alternative, cauliflower rice is a great healthy option, with only 20 calories per serving.

Wednesday Night

Thursday Night

Friday Night
