Easy dinner recipes to see you through lockdown

Stuck for midweek food inspiration? Look no further - the Mighty Small team is here with five quick, easy & healthy weeknight meal ideas! We’ll run through some of our favourite food cupboard saviours and show you how they can spice up your suppers this lockdown.

Monday Night

First up we have Fiid’s Italian Sundried Tomato Lentil Ragu! Rich and hearty, it combines earthy lentils with sweet tomatoes, creating a nourishing and healthy meal. Boasting a long shelf life, it’s vegan & gluten-free, contains 3 of your 5 a day, high in protein & fibre yet low in sugar, & completely fat free.

For a super speedy and nutritious Monday night meal, pop it in the microwave for 2 minutes and serve! We also like to throw it over pasta as a delicious, warming and healthy sauce.

Tuesday Night

Thai Green Curry is the perfect midweek meal. This Bay’s Kitchen low FODMAP stir in sauce is brilliant for speeding up the cooking process. Medium spiced, creamy and with fresh flavours of coconut and lemongrass, it’s ideal for those who are vegan, gluten or dairy-free.

Simply cook up some veg, add in a protein source - we love chicken, soya or tofu, stir in and heat! It’s delicious on its own or when paired with rice or noodles. For a low carb alternative, cauliflower rice is a great healthy option, with only 20 calories per serving.

Wednesday Night

Spice up the midweek slump with a fajita night. Capiscana’s Mexican Chilli & Honey Fajita Kit is the ultimate set for an authentic tasting meal in under 15 minutes! Spiced with Mexican-grown chipotle and ancho poblano chillies for the perfect balance of sweet and smoky flavour, the kit includes 4 large tortillas, chilli & honey sauce and chipotle chilli salsa mix.

To get cooking you will also need: lettuce, chicken, a couple of onions, some peppers and a tomato. Fry up your chicken, onions and peppers and coat with the chilli & honey sauce. Next, chop up the lettuce and tomato, warm the tortillas and start building your fajitas! We recommend starting with a generous dollop of chipotle chilli salsa and also adding guacamole for extra texture and depth. Capsicana’s spice mix makes home-made guac easy - simply mix with one avocado! Made with meat or just with extra veggies, these fajitas will be a filling, healthy and fresh option, ideal for hump day.

Thursday Night

With the working week almost over, Thursdays call for a no-fuss, healthy dinner. Mr Lee’s instant noodles are a food cupboard holy grail! Whether you’re after warming Coconut Chicken Laksa, zingy Zen Garden Vegetables or punchy Hong Kong Street Beef, these healthy & convenient ‘pot noodles’ are guilt free indulgence. 100% gluten-free, they are low in salt, calories, sugar & saturated fats, and also contain no MSG, artificial preservatives, flavourings or colourings.

For guilt-free instant noodles, just pop on the kettle, fill with boiling water and let your dinner cook itself. Limited washing up is also an added bonus!

Friday Night

TGIF, time to treat yourself! If you’re missing meals out this lockdown and fancy trying something new at home, School of Wok’s BBQ Bao Bun Kit is for you. Carefully curated by the award-winning cookery school, this kit contains everything you need to make sticky, fluffy bao buns. A great activity to decompress after a long week, you can even get the kids involved and make an impressive dinner from scratch.

The kit comes with a flour mix, pickling salts, dry rub and glaze. All you need to do is add your choice of fresh ingredients as you cook - we recommend using beef as a protein here, it’s delicious paired with the rich BBQ sauce. Pickled cucumber is also a favourite for added crunch.
