No-Waste Recipes with Small Producers

 

Flawsome!, our Mighty Small newbies, use wonky and surplus fruit to create their incredible award-winning juices. We’ve been inspired and put together delicious, innovative and sustainable recipes and inspo using leftover and odd bit, fruit and veg. We even use the parts you never knew could taste so good - not letting anything go to waste! To this, we’ve paired yummy Mighty Small goodies to make the dishes even more vibrant and flavoursome!

 

1/3 of all fruits and vegetables produced are wasted, partly due to aesthetical standards and supply chain inefficiencies. Founders Maciek and Karina wanted to do something about it.  Inspired by their nan’s tasty home-made recipes, they save imperfect and surplus fruit by transforming it into perfectly crafted cold-pressed juices. What makes their juices so delicious is seasonal produce. They take any wonky or surplus fruits or vegetables left over from the farms and turn them into wonderful juices.

Leftover pumpkin soup, seeds and all! With PLENISH

October means pumpkins - taking a trip to the pumpkin farm, overloading our house with pumpkin decorations or scooping them out and hacking them to pieces for some good old pumpkin carving, but don’t let all that nutritious, delicious pumpkin go to waste, not even the seeds...

We have created a delicious autumnal coconut and pumpkin soup using pumpkin, PLENISH Coconut Milk and only a few other ingredients. Vegan, gluten-free and lower in calories, fat and sugar compared to shop bought soup. With a nutty, crunchy pumpkin seed garnish.

(Serves 4)

Ingredients

- Flesh and seeds from 1 medium Pumpkin
- 1 large brown onion
- 1 stock cube (vegetable or chicken)
- 300ml PLENISH Coconut Milk (add more for desired consistency)
- Salt and pepper to taste
- Optional: Coconut oil, cinnamon, ginger, garlic, turmeric and fenugreek. 

Method 

For the seeds: 
1. Half your pumpkin and scoop out the seeds.
2. Rinse the seeds and spread on a baking sheet with a sprinkling of sea salt. 
3. Toast them in a preheated over for 10 minutes until golden, then allow them to cool. 

For the Pumpkin & Coconut soup:
- Peel the pumpkin and cut into, roughly, 3cm cubes.
- Toss in oil if you choose - we recommend coconut oil to caramelise and add sweetness! 
- Next add your spices - we went for cinnamon, ginger, garlic, turmeric and fenugreek, but sub in or out, utilising what you have available #nowaste
- Bake in a preheated oven, tossing halfway, for 30 minutes or longer - until the pumpkin is soft. 
- Fry one diced brown onion, add the roasted pumpkin, stock and coconut milk then let simmer for 30 minutes.
- Use a hand blender to puree the mix and add more coconut milk, salt and pepper to desired taste and consistency. 
- Serve immediately topped with your toasted pumpkin seeds or portion out and freeze for hearty, delicious meal prep.
